Hi, im trying to keep track of my calories, protein and carb intake
the pasta i have gives these uncooked values
349cals
11.4g protein
72.6g carb
0.8g carb of which sugar
1.4g fat
2.6g fibre
Will the protein and carb values be different when cooked?

No. It'll weigh more cos it absorbs water but it won't lose or gain any nutrition in total. Base your nutrition on the dry weight.

Is it possible that the heat used to cook pasta could cause the denaturation of some protein?

its not going to matter if you denature the protein..its not going to dissapear, it will still be there
secondly, who cares about protein from pasta, just stick a tin of tuna in with it if you are that paranoid lol !
