Cinnamon ginger sweet potatoes

Ready in 20 minutes • Makes
6 servings

• 1 cup Chicken stock
• 1/2 onion, diced
• 1 1/2 tbsp ginger, minced
• 4 cloves garlic, chopped
• 6 medium sweet potatoes, peeled
and cut into cubes
• 1 tsp cinnamon
• 1 tbsp honey
• Sea salt and pepper to taste

1. Heat a large skillet on medium high heat, add 1 tbsp of stock and sauté onions until soft.

2. Add ginger and garlic and mix together with onions.

3. Add sweet potatoes, cinnamon, honey and remaining stock. Stir and let simmer until potatoes are tender (about 15 minutes).

4. Season with salt and pepper. Serve hot.

    ¼ cup coconut oil or butter, softened
    ¼ cup ground almonr or sifted coconut flour
    ½ cup Myprotein peanut butter*
    ½ cup honey
    ¼ teaspoon salt (optional)
    ½ cup flaked coconut
    ½ cup mixed nuts or seeds
    ½ cup raisins or dried fruit

    Mix peanut butter, honey, coconut oil and salt together.
    Stir in ground almonds/coconut flour and mix thoroughly. With your hands work in flaked coconut, nuts, and raisins.

  3. Peanut Butter Protein Balls (yummy)

    1/2 Cup peanut butter
    1/3 Cup of chocolate protein powder
    3 Tbsp honey
    Splash of Vanilla extract
    2 Tbsp dates (cut into small pieces)
    2 Tbsp crushed walnuts
    Decanted coconut

    Banana Pancake Roll (No Oats)

    Prep time: 5 minutes
    Cook time: 5 minutes
    Serves 1

    1 banana
    2 egg whites
    1 tbsp peanut butter
    1 tsp cinnamon powder
    1 tsp honey

    1.Mix eggs whites, peanut butter and cinnamon in a bowl until peanut butter is broken up.

  5. Turkey Base Pizza

    1 Flat Turkey breast/steak (or even chicken)
    Tomato Pizza Paste or Puree
    Olives (sliced)
    Sundried Tomatoes
    Pesto
    Optional sliced Peppers

    Grill turkey on one side for 10-12 minutes, take out of oven and layer your pizza toppings as you like.. Tomato Paste, olives, sundried tomatoes, peppers & pesto. Put back in grill for 5-7minutes.
