Correct me if I'm wrong but the big ass syndrome from squatting is from going so low the emphasis is taken away from the quads and focused onto the gluteus maximus (ass) and hams.

I vary my squatting, sometimes ATG, sometimes stopping at parrallel.

I'm with Hail on this one, squatting has surprisingly become my favourite.

Never used to do them as I always thought my dodgy knees and slightly dodgy back would prevent me from doing them properly. After I did my back in 3 times on the leg press machine, I decided to give them a go. There isn't another exercise that I can push as hard past what I assumed was failure. I'm getting 2 or 3 more reps more at the moment.

I also love the Motorbike Stance rows, I can really feel my back contracting as I get near the end, and bench pullovers, feels like a big stretch followed by strain!

I like Deads as well, they're so draining it's great to just give it your all in them then just collapse in a chair or something afterwards. On top of that they give you DOMS like nothing else, which I love. They're also a lift that I've been consistently improving for a while now as well. It's all good.

In 2nd place I'd have to say something like Dumbbell Rows, I like the burn in my lats and doing 8 heavy reps of these does the job for me.

3rd would be squats, although you didn't ask for a 3rd (or a second I know), I like squats again because of the DOMS and the burn, walking after a hard session always feels. great.

a thousand may well be stopped by three.

I love improvement in things so at the moment because I only started doing them this last month or so I gotta say both deads and chin ups.

Should be moving into 3 figure deads in next week/2 and i've gone from struggling to do 5 chins total to doing 33 across 5 sets in under 5minutes.
