Someone will give you a better answer but yes, wholemeal is better, white bread is bleached and has a lot of nutrients taken out of it

Very true, around 90%+ Nutrients have been removed due to bleaching the flour. I read somewhere that baked goods like breads were terrible sources of energy.

White bread is so processed that its essentially sugar. Neither are that nutrient dense but wholemeal is obviously better, the less its processed the better it is.

Is white bread more 'devitalised' than wholemeal? Yes!

Does wholemeal bread have a lower GI than white bread? Yes - but not by that much!

Does wholemeal bread have a greater quantity of nutrients than white bread? Yes (but still meagre compared to other more natural, unprocessed whole foods) and also a greater quantity of anti-nutrients that will not only interfere with the absorption of the nutrients in the bread but the nutrients derived from other foods eaten with it!

Any wheat bread contains gluten (just one of the anti-nutrients) and can lead to anything from mild intestinal upsets (bloating) through IBS, leaky gut syndrome, gluten intolerance all the way to full-blown celiac's disease!

All in all bread is a rather poor food but many people survive on it!

So if I want a sandwhich, I already use wholemeal... you're saying I should use something else? Like what?

Put the filling in between two pieces of steak

Low carb wrap? You can get some with decent fibre in them.

The need for fibre is grossly overstated too! As Dino_V says, wraps/roll-ups with the fillings wrapped or rolled up in the salad leaves of your choice would make a good replacement for a sandwich if you wanted to ditch bread.
