Hi all,
so, i'm back to a low-carb, high protein diet. Not terribly scientific i guess, but aside the abundance of eggs that i'm necking i'm frying most of my foods, in coconut oil which seems to be the healthiest oil by far.
I'm doing this as i want to use the coconut oil as my main dietary fat intake, so a typical evening meal might be:
chicken, broccoli, peppers, onions, mushrooms with a splash of soy sauce and some jamaican jerk spices, all stir-fried in coconut oil. It takes gorgeous btw..
Can anyone see anything wrong with frying most meals in coconut oil, over say, steaming the veg?
As i'm just getting back into training, i'm not going too specific or crazy yet, suffice to say that i've replaced breakfast cereals with poached eggs, ditched almost all breads and spuds, usually have a tin of mackeral at lunch, protein shake somewhere in the day, evening meal is similar to what i described above, protein shake before bed.
I've also been experimenting with turkey burgers using; turkey mince, 1 egg, onions, peppers and sweet onion sauce, so far they're really tasty and i snack on them throughout the day.
Any comments would be welcome, thanks.
edit: oh, this time last year i was in the best shape i'd been in for a decade. Right now, i'm in the worst shape of a decade, but i know i just need to get back to training, and alter the ratio of lean body mass to fat. My weight hardly ever shifts from 13st (5ft 9in), regardless of mye being in shape or not, but i certainly look and feel better when it's going right.
