  1. Default Beetroot - the secret to moist flapjacks...?

    Sounds dodgy I know, but a friend of mine has about every food allergy going and gets these gluten free muffins from a health shop. I was reading the ingredients on the pack the other day..30% Beetroot! I googled it and apparently it's a popular solution to making moist gluten free muffins!! Not sure how well this would work in flapjacks, perhaps someone with more time and cooking skills than myself could try it out...?

    Carrots are quite good in cakes, lending moistness and sweetness. You can even make courgette cake, which is also nice and moist.

    I think you'll like this recipe then, LH. It's the cake that I grew up on as a kid because my brother and I would always request for our dad to make it, above all other cakes. It's a moist cake that keeps very well in a tupperware box and it actually tastes it's best if you let it age for a day, as is the case with other moist, fruited, spiced cakes. It's really nice made as a loaf aswel and spread with butter.

    Cinnamon And Carrot Cake

    Makes 1 x 1lb (450g) cake

    Ingredients:

    8 oz (225g) wholemeal flour
    8 oz (225g) carrots, peeled and coarsely grated
    4 oz (110g) butter
    4 oz (110g) honey
    4 oz (110g) sugar
    1 tablespoon cinnamon
    1 teaspoon nutmeg
    1 half tablespoon baking powder
    1 handful of raisins (optional)

    Pre-heat the oven to gas mark 3, 170 C. Sift the flour, spices and baking powder into a large bowl. Add the butter, honey and sugar and mix until thoroughly combined. Use butter at room temperature. Finally add in the carrots and raisins and mix in evenly with the cake mixture. Put the mixture into a well greased and floured cake or loaf tin and bake for 60-80 minutes, until it feels firm to the touch and a skewer inserted into the centre comes out clean. Leave the cake in the tin for 10 minutes, then turn out onto a cooling rack.

    There's a bit of a 'thing' at work for beetroot, because of me.

    My colleagues noticed my sexually charged behaivour when i had been consuming beetroot so a couple of them started on it, they both found definite libido boosting factors in beetroot.

    After i drink my ox blood (organic lacto fermented beetroot and red cabbage juice) i feel pretty damn good!

    I like betroot, its nice mixed with couscous (its turns a nice purple colour) a few roasted corgettes and pepper topped with Halloumi cheese mmmm.... even throw a bit of smoked bacon in too

    Seems weird mixing with chocolate and flapjacks tho !

    Have you tried Halloumi cheese everyone?
