Gonna try this this afternoon using olive oil instead of coconut oil. Might try a 'fruit loaf' too, see if that helps with the dryness.

Hmmm. Well I doubled all the ingredients and used olive oil instead of coconut, and... not too impressed. The mixture was very sloppy and couldn't really be molded into anything so I just dolloped what I could get out the bowl (and off my fingers) into the middle of a tray. Lot of waste since it was so sticky. Was surprised how well it rose and it certainly looked the part but the taste was very meh. Like really dry crumpets. Drizzled lots of butter on and had a few bites then threw the rest away. Nice idea, but not for me.

It's in the bin now. Just looked like glossy bread. No one would know it wasn't bread just by looking. Smell/taste and you can tell straight away. Do some yourself, it'll take 10 mins tops (although it is a bit messy).

you ate it with just butter?
surely its better tested with say a sliced bunch of steak and onions in it?
to see if it can match up to a proper steak sarnie without the carbs.
or other meat or sandwich fillings to see if it is a proper substitue.
personally, think wholemeal pittas are decent enough.
