Buckwheat and coconut are fantastic foods with great nutritional profiles and benefits, and now you can enjoy them in your favourite time-honoured 'neolithic' tradition that is porridge!

    Fundamental Ingredients:

2 cups buckwheat sprouts, kasha, or MP's Instant Buckwheat

    1 cup coconut milk

    1tsp cinnamon

    1 tsp nutmeg

Vanilla essence (MP's Vanilla Flavdrops could serve as a calorie free alternative)

    1 tsp stevia

    Optional extras:

    Sprinkle of sea salt

For a fat boost, 1 thinly diced and sliced avocado, or a tablespoon of coconut oil works great. Can also top with nuts and seeds of your choice.

For a carb boost, any decent fresh or dried fruit (e.g. bananas, raisins), or a tablespoon honey, maple syrup, or molasses.

As you can see its quite versatile!

    To serve cold:

Just chuck all ingredients in a food processor (with the exception of nuts and seeds), blend it up for about 10 secs, chill it, and serve!

    To serve warm:

Put coconut milk in a pan and bring to a simmer, then add buckwheat and keep stirring and simmering for about 2 mins. Remove from heat and mix in all other ingredients.

If you are not using a non stick pan, I strongly recommend melting a tablespoon of coconut oil in the pan and coating it before starting the process to stop it sticking.

Paleo options are a good way to improve the healthiness of your diet, but without calorie control (concious or subconscious) wont magically make you slim. The high protein and fibre helps with this by keeping you full. My diet is about 85% paleo but i also consume raw dairy..

If you want to discuss the paleo diet i suggest you search / post in the relevant Diet forum, not here.

That would probably be a better idea when I finally introduce some new meals... I don't eat carbs early in the day. I do love a bit of pineapple *drools*
