    Hey all,

I have ordered liquid egg whites, I orded them before from another company but they were frozen.

As a natural product, I dont understand how heating them can make them able to with stand room tempature? There must be some preservatives added,

Just to clarify there is NOTHING added and NOTHING taken away for that matter (except the yolk of course). The treatment is called "pasturisation", the same process is applied to milk, but obvioulsy slightly different to the pasturisation of LEW.

just to clarify, the LEW can only be stored at room temp if it hasnt been opened. once opened has to be stored in the fridge!!!

no its evapourated (if u mean evaporated powdered long life milk) , no moisture = keep longer.

pasturisation to milk is thats its heated to about 70oC for about 15 seconds, with UHT milk(liquid) its heated to 130oC for 2 seconds, but tastes ****e.
